Our Executive Chef, Eric Brown, brings a story shaped by both heritage and experience. Originally from Puerto Rico, he moved to New York City in 2008 to pursue his culinary training at the French Culinary Institute. That decision marked the beginning of a career grounded in discipline, curiosity, and a deep respect for the craft.
Over the years, Eric has worked his way through every corner of the kitchen, gaining hands-on experience at every station while collaborating with acclaimed chefs such as Marcus Samuelsson, Jean-Georges Vongerichten, Raymond Mohan, and José Andrés. Each step has helped shape his perspective and refine his approach to food.
With more than 15 years leading kitchens across fine dining, hospitality, and large-scale events, Eric is known for creating dishes that feel thoughtful, expressive, and memorable. His work goes beyond flavor, focusing on the full experience at the table. Break the Beet is a reflection of that journey, bringing together his standards, his vision, and his passion for creating something meaningful through food.
